Dinner: Dueling Pasta Edition
Last night’s dinner was delicious if I do say so myself.  I couldn’t decided which pasta sounded more appealing - butternut squash with ricotta or smoked Gouda and roasted pear sacchettes - so I bought and prepared both.
As for sauces, I went super light, but flavorful.
The butternut squash is glazed with brown butter and sage, a classic combo.  For the sacchettes I got creative and sauteed pear slices, spinach, and raisins to pair with the savory, smokey Gouda.  In our opinion, that was the overall winner.
I threw together an arugula salad with a little olive oil, lemon, salt, pepper, and fresh parmesan. Super simple, but pretty powerful.
Overall, I was pleased.  And the leftovers made for a perfect lunch!

 Very proud of my girl………because………her Mom doesn’t cook…..
